
TOMATO-FETA-ZUCCHINI FRITTERS
This recipe was inspired by all of the fresh herbs and vegetables from our garden. While these fritters are an incredible appetizer all year long, we especially enjoy them on warm summer nights when all you want is a lighter meal and a chilled glass of wine.

INGREDIENTS
2 cups of diced fresh Roma tomatoes with their juices
1 cup lightly packed grated zucchini
1/2 red onion, finely chopped
2 teaspoons kosher salt
1 teaspoon white sugar
1/2 teaspoon ground black pepper

1/4 cup chopped fresh parsley
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh oregano
3 single serving packages (1.5 oz. each) of Aristaeus Feta cheese, crumbled
3/4 cup gluten free flour (or all purpose)
3/4 teaspoon baking powder

Seasoned breadcrumbs (we prefer Progresso gluten free or regular)
Olive Oil for frying

INSTRUCTIONS
1. Combine the first 6 ingredients. Let sit for about 15 minutes.
2. Add the herbs, Feta and flour to the tomato mixture. Stir well. Cover with plastic wrap and chill for at least a half hour for all all of the flavors to meld.
3. Put the breadcrumbs in a bowl. Take the tomato mixture out of the refrigerator and mix again making sure to blend the juices at the bottom of the bowl back into the mixture.
4. Scoop the mixture into tablespoons, and gently drop into the breadcrumbs. Coat both sides and flatten slightly.
5. Heat about 1 inch of the olive oil at medium heat until the oil shimmers.
6. Gently place the fritters into the pan and fry for about 3 minutes per side. Use a slatted spatula so the oil drains.
7. Once cooked, place on a plate lined with paper towels. Once all are cooked, gently pat the tops with a paper towel.
These can be served immediately and are complemented by Brooke Farms' Tzatziki, or by themselves. You can also make ahead and refrigerate, and then warm in a 350 degree oven for about 20 minutes before serving.

Add ons: diced hot banana peppers, serrano peppers or jalapeno peppers can be added to the tomato mixture for added punch!
