
EASY MEDITERRANEAN SHRIMP WITH FETA
This is a big family favorite. There are a lot of flavors in this colorful and easy to make dish.
INGREDIENTS
2 lbs shrimp, peeled and deveined
5.3 oz. Aristaeus Feta cheese, cubed
1 cup diced red onion
2 tablespoons chopped garlic
14 oz jar of artichoke hearts, drained
14 oz jar of kalamata olives, drained
1 zucchini, sliced and then quartered
2 pint cherry tomatoes
2 tablespoons olive oil
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
freshly ground black pepper
red pepper flakes (optional)
Note: This recipe does not need any added salt

INSTRUCTIONS
In a large pan, saute the diced red onion in olive oil over high heat for about 5 minutes until it is starting to brown around the edges. Lower the heat to medium and add the garlic, tomatoes, artichokes, olives and zucchini. Cover the pan and let cook for 5 minutes. Add the oregano, basil, thyme, black pepper (to taste), and red pepper flakes (if wanted) and stir. Add the shrimp and stir until combined. Cover the pan and let cook for 10 more minutes stirring occasionally. Once the shrimp are cooked through, shut off the heat source and sprinkle the Feta cheese over the top. Recover the pan and let the Feta soften for about 5 more minutes. Serve over rice, pasta or with warm Pita bread.
