
BRUNCH WORTHY EGG, SAUSAGE & FETA SANDWICHES
These sandwiches are special enough for brunch, and yet are easy enough to make during the weekdays too. To quote a family member - "They are so freakin' good."

INGREDIENTS
1/2 lb. sweet or spicy Italian sausage, casings removed
1 tablespoon unsalted butter
2 English muffins, toasted
1.5 oz. Aristaeus Feta cheese
2 large eggs
1/3 cup sliced pepperoncini slices (drained)
Freshly ground black pepper
Red pepper flakes (optional)

INSTRUCTIONS
Toast English muffins. Immediately put a piece of Aristaeus Feta cheese onto a half and then add a single layer of the pepperoncinis.
Next form the sausage into 2 patties about 1/4 inch thick. Heat a frying pan on medium-high heat until hot, and cook the patties until golden brown on the bottom side, about 2 minutes. Flip and cook an additional 2-3 minutes until this side is also golden brown. Remove from pan and gently lay on top of the Feta cheese and pepperoncinis.
Add 1 tablespoon of butter to the pan and once it is melted and bubbly add the eggs. Lower the heat to medium and cover the pan. Cook the eggs until the yolks are just set about 4-5 minutes. Season with pepper and then remove from pan and gently lay on top of the sausage patties. Place the top of the English muffin on top of the egg and serve hot. Serves 2 or 1 very hungry person!
