
MAMALIGA - FETA POLENTA BREAD
This is a popular dish from Romania that is a great side dish. We serve it with smoked brisket or ribs, or along salad during brunch.

INGREDIENTS
4 cups of water
2 cups ground course cornmeal
1 teaspoon salt
2 tablespoons melted butter
5.3 oz. package of Aristaeus Feta cheese, crumbled
4 eggs, whisked

INSTRUCTIONS
Preheat the oven to 375 degrees

Bring the water, 2 tablespoons butter and salt to a rapid boil. Turn down to a simmer and add the corn meal in 1/2 cup increments mixing slowly. It will be very thick! Continue to stir occasionally for about 10 minutes.
Put half the mixture into an 8x8 greased pan. It will be warm, so use the bottom of a glass or measuring cup to pat it down into the pan. Pour the eggs over the mixture and then the crumbled Aristaeus Feta. Carefully place the rest of the mixture over the eggs and feta and pat down. Pour the melted butter over the top.

Bake at 375 degrees for 30 minutes until the top becomes lightly browned. Cut into pieces and serve warm.
